  • 4 to 5 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang (Korean chili paste)
  • ¼ cup brown sugar
  • ½ cup soy sauce or coconut aminos
  • 2 cups beef broth

Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Season beef chunks with kosher salt and sear until browned on all sides. Remove beef and set aside.
  2. In the same pot, sauté sliced onions, minced garlic, and grated ginger until onions are soft.
  3. Return seared beef to the pot and add gochujang, brown sugar, soy sauce (or coconut aminos), and beef broth. Stir to combine.
  4. Cover and reduce heat to low; simmer for about 3 hours or until meat is tender.
  5. Serve over cooked rice, garnished with fresh cilantro.
