  • 1/4 cup key lime juice
  • 1 tbsp lime zest
  • 1 cup powdered sugar
  • 23 tbsp key lime juice
  • Optional: A drop of green food coloring for presentation

Instructions

  1. Preheat oven to 325°F (165°C) and grease a Bundt pan.
  2. Cream together butter and cream cheese until light and fluffy. Gradually add sugar, mixing well after each addition. Incorporate eggs one at a time.
  3. In a separate bowl, whisk flour and salt; add to the wet mixture until just combined. Stir in key lime juice, zest, and optional food coloring.
  4. Pour half the batter into the prepared pan. Optionally layer with the key lime cream filling before adding remaining batter.
  5. Bake for 75-85 minutes until a toothpick comes out clean. Cool in the pan for 10-15 minutes before transferring to a wire rack.
  6. For the glaze, mix powdered sugar with key lime juice until smooth and drizzle over cooled cake.
