  • 1 medium carrot, diced
  • 1 rib celery, diced
  • 4 cloves garlic, minced
  • 1 (28-ounce) can whole tomatoes, chopped
  • 1 (15-ounce) can navy beans
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Fresh parsley and lemon juice for garnish

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large soup pot over medium-high heat, drizzle olive oil and brown the spicy sausage for a few minutes.
  3. Add leeks, fennel, parsnip, carrot, celery, salt, pepper, and Italian seasoning; sauté until veggies are tender.
  4. Stir in garlic and cook until fragrant; then add chopped tomatoes and navy beans.
  5. Pour in chicken stock/broth and bring to a simmer; cover and cook for about 20 minutes until veggies are soft.
  6. Stir in chopped kale and parsley with a squeeze of lemon juice before serving over gnocchi.
