  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced

Instructions

  1. Cook rigatoni in salted boiling water per package instructions. Drain and reserve 1/2 cup pasta water.
  2. Season chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat and cook chicken until golden (5-7 minutes). Set aside.
  3. In the same skillet, sauté carrots for 3-4 minutes; add garlic and cook for an additional minute.
  4. Lower heat, add butter, then stir in honey, soy sauce, and black pepper. Simmer for 2-3 minutes until thickened.
  5. Return chicken to the skillet, mix in pasta, adding reserved water if needed. Serve warm.
