  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 250 ml chicken broth
  • 200 ml heavy cream
  • 800 g potatoes
  • 400 g baby carrots
  • 2 tbsp butter
  • Salt & pepper
  • 1 tsp paprika
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 100 ml warm milk
  • 1 tbsp honey
  • Salt & nutmeg

Instructions

  1. Season chicken with paprika, salt, and pepper.
  2. In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and heavy cream along with mustard and herbs; simmer until creamy.
  4. Return chicken to the skillet and cook through in the sauce.
  5. Boil peeled potatoes in salted water until tender; mash with butter, warm milk, salt, and nutmeg.
  6. Steam baby carrots until tender; glaze with melted butter and honey (or brown sugar).
  7. Serve by plating mashed potatoes, glazed carrots, and topped with herb cream chicken.
