  • 2 medium zucchini, sliced (about 2 pounds)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the zucchini: Slice the zucchini into rounds, sprinkle with salt, and let sit for 15 minutes to draw out moisture. Rinse and pat dry.
  2. Cook the beef mixture: Heat olive oil in a skillet over medium-high heat. Sauté onions until soft, add garlic and ground beef until browned. Stir in drained tomatoes and seasonings; remove from heat.
  3. Layer the casserole: Preheat oven to 350°F (175°C). In a baking dish, layer half of the beef mixture, then half of the zucchini slices, followed by half of the cheese. Repeat layers.
  4. Bake and serve: Bake for 20–25 minutes until cheese is melted and slightly browned. Rest for 10 minutes before serving.
