  • 4 teaspoons extra virgin olive oil
  • Juice of 1/2 lime
  • 4 boneless skinless chicken thighs
  • 2 corn on the cobs
  • 2 romaine hearts
  • 4 oz avocado, sliced
  • 2 tablespoons diced red onion
  • 1/2 cup halved grape tomatoes

Instructions

  1. In a bowl, mix salsa, olive oil, and lime juice. Set aside.
  2. Season chicken thighs with salt, oregano, and cumin.
  3. Preheat grill to medium heat; halve romaine heads vertically and spray cut sides with olive oil.
  4. Grill chicken and corn for about 5 minutes per side until cooked through.
  5. Grill romaine cut side down for 1–2 minutes until lightly charred.
  6. Slice chicken and corn off the cob; assemble salad with grilled romaine topped with chicken, corn, avocado, onion, tomatoes, a pinch of salt, and drizzle with dressing.
