  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp finely chopped red onion
  • 1 tbsp lime juice
  • Fresh cilantro, optional
  • Pinch of salt

Instructions

  1. Season the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill or pan-fry for about 6–8 minutes on each side until fully cooked. Let them rest before slicing.
  2. Toss sweet potato fries with olive oil, paprika, chili powder (if using), and salt. Spread them out on a baking sheet. Bake at 220°C (425°F) for 20–25 minutes, flipping halfway through for even cooking.
  3. In a mixing bowl, mash the ripe avocado with lime juice, chopped cilantro, and salt until creamy yet slightly chunky.
  4. Combine diced avocado, halved cherry tomatoes, finely chopped red onion, lime juice, optional fresh cilantro, and a pinch of salt in a small bowl. Mix well.
  5. In a large serving bowl or individual bowls, layer sweet potato fries first. Top them with sliced grilled chicken breast followed by a generous scoop of guacamole. Finish with fresh tomato-avocado salsa on top for added flavor and color.
