  • 8 chicken pieces
  • 4 potatoes
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard
  • Salt
  • Pepper
  • Oregano
  • Paprika

Instructions

  1. Preheat your oven to 175°C (fan forced).
  2. Prepare a baking dish by lining it with extra-wide parchment paper.
  3. Place chicken skin-side up in the dish; surround with chopped potatoes.
  4. Season chicken and potatoes generously with salt, pepper, oregano, and paprika.
  5. Blend marinade ingredients until smooth: lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard.
  6. Coat chicken and potatoes with half of the marinade; flip chicken skin-side up and pour remaining marinade over the top.
  7. Cover with wet baking paper followed by aluminum foil; bake for 90 minutes.
  8. Remove covers; bake for an additional 30 minutes or until cooked through.
