  • 4 boneless, skinless chicken thighs
  • 1/4 cup light soy sauce
  • 2 inch piece fresh ginger, chopped
  • 8 oz fresh shiitake mushrooms
  • 5 oz baby spinach
  • 12 oz ramen noodles

Instructions

  2. Season chicken thighs with black pepper and sear in a skillet over medium-high heat for 4–5 minutes per side until golden.
  3. Prepare the glaze by whisking together remaining soy sauces, brown sugar, ginger, and garlic; pour over the chicken in the skillet and cook until thickened.
  4. Slice the cooked chicken after resting briefly.
  5. Strain the broth into another pot, add mushrooms and cook for an additional 3 minutes before adding spinach.
