  • 2 garlic cloves
  • 1 lime
  • 2 boneless skinless chicken thighs
  • 15g fresh ginger
  • 1 red chili
  • 0.5 red onion
  • 1 tsp curry powder
  • 350ml water
  • 250g microwave rice
  • Olive oil, salt, black pepper to taste
  • Fresh coriander and mint

Instructions

  1. Marinate chicken: Grate one garlic clove into a bowl, squeeze in juice from half the lime, season with salt, and add chicken thighs. Marinate for at least 30 minutes.
  2. Prepare vegetables: Slice remaining garlic clove, cut ginger into matchsticks, and finely slice red chili.
  3. Cook chicken: Heat olive oil in a frying pan over medium heat. Add marinated chicken thighs and cook until charred and cooked through (10-15 minutes). Transfer to a plate.
  4. Make broth: In the same pan, add ginger, garlic, and chili; cook for 3 minutes until fragrant. Stir in curry powder and water; simmer for 5 minutes. Finish with juice from the remaining lime half; season to taste.
  5. Herb salad: Mix coriander leaves, mint leaves, and sliced red onion in a bowl.
  6. Serve: Reheat microwave rice as per package instructions; divide among bowls, pour broth over rice, top with sliced chicken and herb salad.
