  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 3/4 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 2 ounces semisweet or German chocolate (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a microwave-safe mixing bowl, stir together melted butter and brown sugar until blended. Let cool slightly before adding the egg and egg yolk; mix well.
  3. Incorporate vanilla extract, then add flour, cocoa powder, baking soda, and salt. Stir until just combined.
  4. Fold in coconut, pecans, and chopped chocolate until evenly distributed.
  5. Use a medium cookie scoop to drop dough onto prepared sheets, spacing them about 2 inches apart. Bake for 8–12 minutes until edges are set but centers remain soft.
