  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic. Rinse the broccoli florets and spinach leaves.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken, season with salt and pepper, and sauté until golden brown (6-8 minutes). Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and toss in the broccoli florets. Cook for about 3-4 minutes until softening.
  4. Reduce heat to medium, add minced garlic followed by spinach leaves. Stir until spinach wilts (about 2 minutes).
  5. Return cooked chicken to the skillet along with any released juices. Pour in chicken broth or water; stir well and let simmer for 2-3 minutes.
  6. Drizzle lemon juice before serving; adjust seasoning as needed.
