  • ½ tsp baking powder
  • ½ tsp baking soda

  • ½ cup unsalted butter (room temperature)
  • ⅓ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 2 tsp vanilla extract
  • 1 large egg
  • ½ cup fruity pebble cereal (plus extra for rolling)
  • ½ cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  3. Cream the unsalted butter with both sugars using an electric mixer until light and fluffy (about 1-2 minutes). Mix in the vanilla extract and egg until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the fruity pebbles and white chocolate chips.
  5. Using a cookie scoop, form balls of dough and roll them in extra fruity pebbles before placing them on the prepared baking sheet.
  6. Bake for 9-12 minutes until edges are lightly golden brown but the center is slightly underdone. Press additional white chocolate chips into the tops right after removing from the oven.
  7. Cool on the pan for about 5 minutes before transferring to a wire rack to cool completely.
