  • 23 tbsp olive oil, as needed
  • 2 tbsp unsalted butter
  • 1 tsp brown sugar
  • 1 tbsp fresh thyme leaves
  • 4 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp tomato paste, optional
  • 1 tbsp all-purpose flour
  • 2 ½ cups beef broth or stock
  • 2 bay leaves
  • 1 white baguette, sliced
  • Olive oil, for brushing
  • 1 ½ cups shredded Gruyère cheese
  • 3 tbsp grated Parmesan cheese
  • ½ tbsp fresh thyme, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season beef with salt and pepper; sear in olive oil until browned.
  3. Caramelize onions in butter with brown sugar until golden.
  4. Add garlic and thyme; stir in flour, broth, mustard, and Worcestershire sauce.
  5. Return beef to pot; simmer covered in the oven at 320°F (160°C) for about 1½ hours.
  6. Toast baguette slices brushed with olive oil until golden.
  7. Assemble by spreading mustard on toast, topping with cheese, then broiling until melted.
  8. Serve stew in bowls topped with cheesy toast and fresh thyme.
