  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • 4 shallots (diced)
  • 1 rib celery (diced)
  • 45 sprigs fresh thyme
  • 2 cloves garlic (minced)
  • 125g turkey bacon lardons
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 125ml heavy cream

Instructions

  1. Preheat your oven to 180°C (350°F). Pat chicken dry and season with salt.
  2. In a large casserole dish, heat olive oil over medium-high heat. Brown the chicken on all sides, then set aside.
  3. In the same pan, cook turkey bacon until crispy; remove excess fat.
  4. Sauté shallots, celery, and thyme until soft, then add garlic for another minute.
  5. Stir in apple juice, scraping the pan to deglaze. Add flour to form a paste before gradually mixing in chicken stock and apple juice.
  6. Return chicken and turkey bacon to the pot; bring to a boil then cover and bake for 30 minutes.
  7. Uncover and bake for an additional 30 minutes while frying apple wedges until golden.
  8. Lastly, stir in cream and add cooked apple wedges; bake uncovered for another 20 minutes before serving.
