Ingredients

  • 4 cups edible flower blossoms
  • 4 cups water
  • 2 tbsp lemon juice
  • 1 to 4 cup sugar (adjust to taste)
  • 1 box powdered pectin (1.75 oz)

Instructions

  1. Prepare the flowers by removing stems and any green parts.
  2. Infuse the flowers by pouring boiling water over them and letting steep for about 10 minutes.
  3. Strain the floral tea into a saucepan and add lemon juice.
  4. Bring the mixture to a boil, stir in pectin until dissolved, then boil for an additional minute.
  5. Gradually add sugar while stirring until fully dissolved; boil for another minute.
  6. Ladle into sterilized jars and process in a water bath canner for 10 minutes if canning.
