  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (optional)
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 3 ½ tablespoons milk
  • ½ cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 150°C (300°F) and line baking sheets with parchment paper or silicone mats.
  2. Sift together almond flour and powdered sugar in a mixing bowl.
  3. In a separate bowl, whip egg whites until foamy; gradually add granulated sugar until soft peaks form.
  4. Gently fold dry ingredients into whipped egg whites without overmixing.
  5. If desired, mix in gel food coloring until you reach your preferred shade.
  6. Pipe small circles onto prepared baking sheets and let them rest for about 30 minutes until they form a skin.
