  • 2 cloves garlic
  • 1/2 medium white onion
  • 1/3 cup fresh parsley
  • 1/2 cup grated cheese (Pecorino Romano or Parmigiano Reggiano)
  • 1012 cups chicken broth
  • 2 cups cooked small pasta (like acini di pepe)
  • 8 cups greens (baby spinach, kale)

Instructions

  1. In a large bowl, mix torn bread, minced garlic, grated onion, parsley, cheese, salt, egg, and Worcestershire sauce until combined. Add ground beef and mix well.
  2. Shape the mixture into small meatballs (about 3/4 inch) and place on a baking sheet.
  3. Heat olive oil in a large pot over low heat; sauté chopped onions, celery, carrots, salt, and pepper for about 15 minutes. Stir in garlic and sage until fragrant.
  4. Pour in chicken broth; bring to a boil.
  5. Add meatballs to boiling broth. Cook until they float to the surface and reach an internal temperature of 145°F.
  6. Stir in the greens just before serving along with cooked pasta.
