  • 1.52 lbs fresh green beans, trimmed and cut into 23" pieces
  • 1.5 lbs small potatoes, halved
  • 1 large onion, diced
  • 1 lb chicken or turkey sausage, sliced into rounds
  • 1/2 cup (1 stick) butter
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. Place halved potatoes in a large crock pot. Sprinkle with pepper and half of the Cajun seasoning.
  2. Add the stick of butter on top of the potatoes.
  3. Layer green beans and diced onion over the potatoes and sprinkle with remaining Cajun seasoning.
  4. Top with sliced sausage.
  5. Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once an hour.
  6. Taste and adjust seasoning before serving.
  7. Keep on Warm setting until ready to serve.
