  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/4 teaspoon pepper
  • 1/4 cup grated parmesan cheese (plus more for topping)
  • 48 oz marinara sauce
  • 12 oz gluten-free penne pasta
  • 16 oz shredded mozzarella cheese

Instructions

  1. Spray the slow cooker insert with non-stick spray.
  2. In a mixing bowl, combine ricotta, eggs, basil, salt, pepper, and parmesan until smooth.
  3. Layer the bottom of the slow cooker with marinara sauce followed by gluten-free penne.
  4. Drop scoops of the ricotta mixture over the pasta.
  5. Sprinkle shredded mozzarella on top.
  6. Repeat layering two more times, finishing with marinara sauce and mozzarella.
  7. Cover and cook on high for 2 ½ hours until bubbly.
  8. Serve hot with extra grated parmesan if desired.
