  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press and cube the extra-firm tofu. Coat with a mixture of cornstarch, flour, garlic powder, salt, and pepper.
  2. Heat a non-stick skillet over medium-high heat and cook the tofu until golden brown (5-7 minutes).
  3. For the teriyaki sauce, whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil.
  4. Cook brown rice in vegetable broth until tender (15-20 minutes).
  5. Assemble by layering rice, avocado slices, crispy tofu, and drizzle with teriyaki sauce. Serve warm.
