  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat the oven to 425°F.
  2. Butter a baking dish and set aside.
  3. Slice zucchini, sprinkle with salt, let rest for 15 minutes, then pat dry.
  4. Arrange zucchini slices in the prepared baking dish.
  5. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese until smooth.
  6. Melt butter in a saucepan over medium heat; sauté garlic until fragrant.
  7. Add the cream mixture to the saucepan, whisking until it bubbles.
  8. Stir in half of the mozzarella cheese until melted.
  9. Pour the creamy mixture over zucchini and sprinkle with remaining cheeses.
  10. Bake for 18-22 minutes until golden brown; let cool for 5-10 minutes before serving.
