  • ½ pound Penne pasta
  • 1 pound Boneless skinless chicken breast
  • 1 tablespoon Olive oil
  • 2 Garlic cloves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1 cup Chicken broth
  • 1 cup Half and half
  • ½ cup Freshly grated Parmesan cheese
  • 1 cup Freshly shredded Mozzarella cheese
  • ½ cup Basil pesto

Instructions

  1. Boil the penne pasta until al dente, drain, and set aside.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic, Italian seasoning, and diced chicken until cooked through. Season with salt and pepper.
  3. Remove chicken from the skillet; melt butter in the same skillet. Whisk in flour for about three minutes until golden.
  4. Gradually add chicken broth and half & half while whisking continuously; simmer for five minutes until thickened.
  5. Stir in pesto, Parmesan, and Mozzarella cheeses until melted. Add cooked pasta and chicken back into the skillet; mix well.
  6. Garnish with fresh basil before serving.
