  • 12 large eggs
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • 1 stalk celery, finely chopped
  • 1 green onion, chopped
  • Spices: Cajun seasoning and hot sauce

Instructions

  1. Hard-boil the eggs by placing them in a pot, covering with water, and boiling for 2 minutes. Turn off the heat and let them sit covered for 11 minutes.
  2. Cool the eggs under running water before peeling them.
  3. In a mixing bowl, combine egg yolks with mayonnaise, mustard, celery, green onion, Cajun seasoning, and hot sauce until smooth.
  4. Fill each egg white half with the mixture and top with crawfish.
