  • 4 large ears of fresh corn (shucked)
  • 1 heaping cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • 3 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh basil
  • 1/4 cup olive oil
  • 1.5 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1.5 teaspoons honey
  • 1/2 teaspoon minced garlic
  • Salt and freshly ground black pepper to taste

Instructions

  1. Make the Dressing: In a mixing bowl, whisk together olive oil, red apple vinegar, lemon juice, honey, minced garlic, salt, and pepper. Set aside in the refrigerator.
  2. Prepare the Corn: Bring a large pot of water to a boil. Add the corn and cook for 3 minutes (or 2 for crisper corn).
  3. Cool the Corn: Transfer cooked corn to an ice water bath for a few minutes to cool down quickly. Drain well.
  4. Cut Kernels: Carefully cut kernels from the cobs and place them in a mixing bowl.
  5. Combine Ingredients: Add halved grape tomatoes, diced cucumber, red onion, feta cheese, parsley, and basil into the bowl with corn.
  6. Dress the Salad: Whisk the dressing again and pour it over all salad ingredients; toss well to coat evenly.
