  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream
  • Additional chopped Oreo cookies, to garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. In a large mixing bowl, beat softened butter and sugar until light and fluffy. Add vanilla extract, then mix in the egg whites one at a time until fully incorporated.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients while alternating with the milk. Fold in the chopped Oreo cookies.
  4. Divide batter between the prepared pans, smooth the tops with a spatula, and bake for about 30 minutes or until a toothpick comes out clean. Allow cooling in pans for 10 minutes before transferring to a cooling rack.
  5. Once cooled, place one layer of cake on a serving plate. Spread half of the softened ice cream over the top. Carefully place the second layer on top, and repeat with the remaining ice cream.
  6. Spread whipped cream evenly over the top of the assembled cake and garnish with additional chopped Oreo cookies.
