  • 2 lbs beef chuck, cut into large cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • Coconut milk (enough to cover beef)

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté chopped onion until translucent; add garlic and ginger until fragrant.
  2. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder. Add beef cubes and coat with spices.
  3. Pour in coconut milk to cover the beef completely. Bring to a gentle simmer, reduce heat to low, cover, and braise for about 1.5 hours until the beef is tender.
  4. Adjust seasoning if necessary and serve hot over rice or with bread.
