  • 2 lbs beef chuck, cut into large chunks
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • Salt and black pepper, to taste

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Season beef with salt and pepper; sear in batches until browned on all sides. Remove and set aside.
  2. In the same pot, reduce heat to medium and sauté onions, garlic, and ginger until translucent. Stir in curry powder and cook until fragrant.
  3. Return beef to the pot along with juices; pour in coconut milk and beef broth. Stir to combine.
  4. Bring to a simmer over medium heat; then reduce heat to low, cover, and cook for 2-3 hours until beef is tender.
