  • Coconut milk (to taste)
  • Water or broth (enough to cover beef)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté onion until translucent, then add garlic and ginger; cook for 2 minutes until fragrant.
  2. Increase heat to medium-high and brown the beef chunks on all sides for 5-7 minutes.
  3. Sprinkle in curry powder and stir to coat beef evenly; cook for another 2 minutes.
  4. Add enough water or broth to cover the beef completely. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5-2 hours until fork-tender.
