  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups cake flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon to create the filling.
  3. In a large bowl, combine the dry ingredients: both flours, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter and granulated sugar in a stand mixer until smooth. Add eggs and vanilla extract; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture until fully incorporated.
  6. On a floured surface, shape the dough into a rectangle and spread the cinnamon filling evenly on top.
  7. Roll up the dough from one edge and cut into approximately 10–12 cookies.
  8. Shape each cookie into balls and bake for 9–11 minutes until lightly golden.
  9. For frosting, beat cream cheese and softened butter until creamy; add powdered sugar and vanilla until smooth.
  10. Frost cooled cookies and enjoy!
