  • 8 ounces egg noodles or rice noodles
  • 1 pound boneless, skinless chicken breasts
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (to thicken)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Boil water in a pot. Add noodles and cook according to package instructions until al dente. Drain and set aside.
  2. Heat vegetable oil in a wok over medium-high heat. Stir-fry sliced chicken until golden brown (about 5-7 minutes). Remove from pan.
  3. In the same wok, stir-fry bell peppers, broccoli, carrot, and green onions for about 3-4 minutes until tender-crisp.
  4. Combine soy sauce, honey/maple syrup, rice vinegar, garlic, ginger, and cornstarch mixture in a bowl. Pour over vegetables; stir well.
  5. Return chicken to the wok; toss everything together until heated through (about 2 minutes). Serve immediately.
