  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups sliced mushrooms
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook jasmine or basmati rice in salted water until tender (about 15 minutes).
  2. Heat olive oil in a large skillet or wok over medium-high heat. Sauté diced chicken seasoned with salt and pepper until cooked through (5-7 minutes). Remove from pan.
  3. In the same pan, add sesame oil and sauté onions until translucent. Add garlic, broccoli, and mushrooms; cook until tender-crisp (4-5 minutes).
  4. Return chicken to the pan, pour in soy sauce, and stir well.
  5. Mix cornstarch with water and add to the skillet; let simmer until sauce thickens.
  6. Serve hot over rice.
