  • 2 cups cauliflower florets

  • 1 cup zucchini, sliced and patted dry
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs mixed with 1 tablespoon melted butter

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly steam or blanch the broccoli, cauliflower, and carrots until just tender; pat dry.
  2. In a saucepan over medium heat, melt the butter and whisk in the flour to create a roux. Gradually add the milk while whisking until smooth and thickened. Stir in the cheeses, garlic powder, mustard powder, salt, and pepper until melted.
  3. Layer the steamed vegetables in a greased 9×13-inch dish and pour the cheese sauce over them. Gently fold to coat evenly.
  4. Top with grated Parmesan and breadcrumbs mixed with melted butter. Bake uncovered for 25–30 minutes until bubbly and golden brown.
  5. Allow to rest for 10 minutes before serving.
