  • 2 1/4 tsp active dry yeast
  • 1 tsp granulated white sugar, to bloom the yeast
  • 4 3/4 cups (593 g) all-purpose flour, spooned and leveled
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon, for filling
  • 3/4 tsp ground ginger, for filling
  • 1/4 tsp ground allspice, for filling
  • 1/4 tsp ground nutmeg, for filling
  • 3/4 tsp ground cardamom, for filling
  • 1/8 tsp ground cloves, for filling
  • 1/3 cup (116 g) honey
  • 6 tbsp (84 g) unsalted butter, very softened
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar
  • Vanilla extract, as needed
  • Spices: use same as above

Instructions

  1. Warm milk to about 110°F and combine it with yeast and granulated sugar. Let it sit until foamy.
  2. In a separate bowl, whisk together flour, spices, and salt.
  3. Gradually mix dry ingredients into the yeast mixture, followed by eggs and softened butter. Knead until smooth.
  4. Let the dough rise in a warm spot until doubled in size (about 1 hour).
  5. Prepare the filling by mixing light brown sugar with spices.
  6. Roll out the dough, spread softened butter, and sprinkle the filling evenly before rolling tightly.
  7. Slice into pieces, place in a greased baking dish, cover, and let rise again (30 minutes).
  8. Preheat oven to 350°F and bake rolls for 30 minutes until golden brown.
  9. While baking, prepare frosting by combining softened butter, cream cheese, powdered sugar, and spices.
  10. Drizzle warm caramel sauce over baked rolls followed by frosting while still warm.
