  • 1 Tbsp butter or olive oil
  • 1 medium-sized onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • Fresh parsley, chopped

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion with a pinch of salt and pepper; sauté for about 5 minutes until soft.
  2. Stir in the garlic and cook for another minute before adding the carrots, potatoes, celery, herbs, salt, and pepper. Stir well.
  3. Pour in the vegetable broth and bring to a boil; then lower to a simmer for about 20 minutes.
  4. Allow to cool slightly, then blend about 1 cup of the soup until smooth. Return blended portion to the pot.
  5. Taste and adjust seasoning if necessary; stir in fresh parsley before serving.
