  • 1 lb boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Cajun seasoning
  • Salt and freshly ground black pepper

Instructions

  1. Cook linguine in salted boiling water until al dente; reserve ½ cup pasta water and drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Sear chicken in olive oil and 1 tbsp butter until golden brown; add half of the garlic during the last minute.
  4. In the same skillet, melt remaining butter; sauté remaining garlic until fragrant.
  5. Add heavy cream and cheeses; stir until smooth and creamy.
  6. Adjust sauce with reserved pasta water if too thick; mix in cooked linguine until well coated.
  7. Serve topped with seared chicken and garnish with parsley.
