  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat grill to medium-high heat. Season chicken or steak with olive oil, chili powder, cumin, salt, and pepper. Grill for 2-3 minutes per side until cooked through.
  2. In a mixing bowl, combine diced tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper for pico de gallo.
  3. Whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and black pepper for chipotle aioli.
  4. Assemble each bowl with cooked rice topped with grilled protein, pico de gallo, and drizzle of chipotle aioli.
