Ingredients

  • 1 large burrata ball
  • 45 ripe plums
  • ½ cup chopped pistachios
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Fresh thyme leaves
  • Sea salt and cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve and pit the plums, placing them cut-side up on a lined baking tray. Drizzle with olive oil and honey (if using).
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Let the plums cool slightly before plating.
  5. Place burrata in the center of a serving plate, arrange roasted plums around it, and sprinkle with pistachios and thyme.
  6. Drizzle with more olive oil and season with sea salt and cracked black pepper.
  7. Serve immediately with toasted sourdough or artisan crackers.
