  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Prepare the crust by combining flour and salt in a mixing bowl. Cut in cold butter until crumbly.
  2. Gradually add water and apple cider vinegar until dough forms. Refrigerate for at least 30 minutes.
  3. In a saucepan, melt butter over medium heat until golden brown, stirring frequently.
  4. Mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, and let sit for about 15 minutes.
  5. Preheat oven to 375°F (190°C). Roll out half of the chilled dough and fit into a pie dish. Fill with fruit mixture.
  6. Roll out remaining dough for the top crust, seal edges, and brush with whisked egg.
  7. Bake for about 70 minutes or until golden brown and bubbly.
