  • 16 oz sugar
  • 1.5 oz lemon juice (freshly squeezed)
  • 0.5 oz balsamic vinegar
  • 1/2 vanilla bean (split and scraped; or 1 teaspoon vanilla extract)

Instructions

  1. Rinse blueberries under cool water and remove stems.
  2. In a heavy-bottomed saucepan, combine blueberries, sugar, lemon juice, and balsamic vinegar. Stir to coat.
  3. Over medium heat, bring the mixture to a simmer while stirring occasionally. Once bubbling, lower heat and cook for about 30 minutes until thickened.
  4. In the last few minutes of cooking, stir in scraped vanilla bean seeds or vanilla extract.
  5. Pour hot jam into sterilized jars, seal tightly, and let cool before refrigerating.
