  • 3 and 1/3 cups flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cut into cubes)
  • Zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a springform pan by lining it with parchment paper and spraying with nonstick cooking spray.
  2. In a large bowl, combine flour, baking powder, salt, brown sugar, white sugar, and lemon zest (if using). Add cold butter and mix until crumbly.
  3. Stir in eggs and vanilla extract until just combined.
  4. Press two-thirds of the mixture into the bottom and up the sides of the prepared pan. Chill for about 30 minutes.
  5. For the filling, mix mascarpone cheese, cream cheese, caster sugar, corn starch, eggs, and vanilla extract until smooth.
  6. Pour half of the cheesecake mixture into the chilled crust and add half of the blueberries on top. Layer with remaining cheesecake mixture and top with leftover crumbs and remaining blueberries.
  7. Bake for about 65 to 75 minutes or until golden brown; cover with foil if browning too quickly.
  8. Let cool completely before serving.
