  • 1/8 tsp almond extract
  • Several drops pink food coloring (optional)
  • 6 egg whites (about 180 g)
  • 1 3/4 cups plus 2 tbsp granulated sugar
  • 2 tbsp light corn syrup
  • 1/4 tsp cream of tartar
  • Dash of salt
  • 1 tsp vanilla bean paste or pure vanilla extract
  • Several drops pink food coloring (optional)
  • Rainbow nonpareil sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an ungreased angel food cake pan.
  2. Sift together cake flour, powdered sugar, and salt in a bowl; set aside.
  3. In another bowl, beat egg whites and cream of tartar until soft peaks form.
  4. Gradually add superfine sugar while whipping until stiff peaks form; mix in vanilla and almond extracts.
  5. Gently fold in dry ingredients and food coloring until just combined.
