  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 2 tablespoons honey
  • Sriracha to taste

Instructions

  1. Marinate chicken in buttermilk mixed with half a tablespoon of Sriracha for at least 15 minutes.
  2. In a separate bowl, whisk together mayonnaise, Thai sweet chili sauce, honey, and remaining Sriracha for the bang bang sauce.
  3. Set up your breading station with flour mixed with garlic powder and seasonings in one bowl, beaten egg in another, and panko breadcrumbs in a third.
  4. Bread each marinated tenderloin by dipping it first in the flour mixture, then the egg wash, followed by coating it with panko breadcrumbs.
  5. Heat canola oil in a deep fryer or pot over medium-high heat. Fry chicken pieces in batches until golden brown (about 6 minutes per batch).
