  • 1 pound zucchini (cut into 1/2-inch sticks)
  • 1/3 cup flour
  • 1 large egg
  • 3/4 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • Cooking spray or oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon Italian seasoning
  • ground black pepper (to taste)

Instructions

  1. Preheat the oven to 425°F (220°C). Coat a baking sheet with cooking spray or oil.
  2. In one shallow dish, mix flour, garlic powder, and salt. In another, beat the egg. In a third dish, combine breadcrumbs, Parmesan cheese, Italian seasoning, additional garlic powder, salt, and pepper.
  3. Coat each zucchini stick in the flour mixture, dip it in the beaten egg, and then coat it with the breadcrumb mixture.
  4. Place the coated zucchini fries on the prepared baking sheet in a single layer and bake for about 20 minutes or until golden brown and crispy. Flip halfway through cooking.
