  • 1 pound chicken sausage (or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced

  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add onion, carrot, and celery; sauté until tender (about 5 minutes). Stir in garlic and seasonings; cook for another minute.
