  • 2 cups chicken or vegetable broth
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium tomato (diced)
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt (to taste)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent (3–4 minutes). Stir in the minced garlic and cook for another minute.
  2. Add the rinsed rice to the pan and stir for about 2–3 minutes until slightly toasted.
  3. Pour in the chicken or vegetable broth along with diced tomato and tomato sauce. Season with salt to taste and stir well.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until all liquid is absorbed.
  5. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork, stir in peas if using, garnish with cilantro, and serve with lime wedges.
