  • 3 lbs beef chuck
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons flour
  • 1 tablespoon neutral oil
  • 1 yellow onion, chopped
  • 3 garlic cloves
  • 6 guajillo chilies, stems and seeds removed
  • 4 ancho chilies, stems and seeds removed
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon dried Mexican oregano
  • 2.5 cups beef broth
  • Fresh garnishes: diced white onion
  • chopped cilantro
  • sliced radishes
  • lime wedges

Instructions

  1. Toast the dried chilies in a dry skillet over medium heat for about 2–3 minutes until fragrant. Transfer to a saucepan with chopped onion and garlic, cover with water, and simmer for about 10 minutes.
  2. Blend the softened chilies, onion, garlic, and some soaking liquid until smooth. Season the sauce with salt and pepper.
  3. Cut beef into cubes; season with salt and pepper. Dredge in flour.
  4. In a Dutch oven over medium-high heat, sear the beef in neutral oil until browned on all sides.
  5. Combine seared beef with the blended sauce in the pot; add bay leaves and simmer on low for about two hours until tender.
  6. Skim excess oil before serving hot with warm corn tortillas and desired toppings.
