  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 8 oz cream cheese (softened)
  • 1 cup butter (softened)
  • 1 jar quality apricot preserves

Instructions

  1. In a mixing bowl, cream together the butter and cream cheese until smooth.
  2. In another bowl, sift together the flour and salt; then stir in the lemon zest.
  3. Gradually blend the dry ingredients into the creamed mixture until well combined to form a sticky dough. Shape into a ball and refrigerate for 30 minutes.
  4. On a floured surface, divide the chilled dough into three pieces and roll each piece to about 1/8 to 1/4 inch thick. Cut into 3-inch squares.
  5. Place one teaspoon of apricot preserves in the center of each square. Brush edges with beaten egg whites, fold corners to cover filling, and seal gently.
  6. Preheat your oven to 350°F (175°C). Place cookies on an ungreased cookie sheet about an inch apart and bake for approximately 25 minutes until lightly browned. Allow cooling on a wire rack before serving.
