  • 1 teaspoon vegetable or canola oil
  • ½ medium red onion, finely chopped
  • 1½ teaspoons minced fresh thyme
  • ½ teaspoon salt, divided
  • 16 ounces skinless, boneless chicken breasts (4 cutlets)
  • ⅓ cup all-fruit or reduced-sugar apricot jam
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  2. Season chicken with thyme and ¼ teaspoon salt. Add to the skillet and cook for 6 minutes on each side or until fully cooked. Remove chicken from pan and keep warm.
  3. In the same skillet, reduce heat to medium. Add remaining salt, apricot jam, balsamic vinegar, and black pepper. Stir constantly until the mixture forms a smooth sauce.
  4. Spoon the sauce over the chicken cutlets and serve immediately.
